Rosé Oysters a la Atlantic Shores

Chef Kyle created this beautiful, delicious starter for our 2019 Winter Wine Fest. It gets your taste buds working with tangy vinegar, sweet and dry from the brut rose, and saltiness from the fresh oyster. Our senior living residents in Virginia Beach enjoy Chef Kyle’s dining services.

Rosé Oysters

Yields: 2 cups

  • .75 cup red wine vinegar
  • 1.25 cup Brut Rosé
  • 2 Tablespoons shallot, fresh, fine dice
  • To Taste Fresh Cracked Black Pepper

Method of Preparation:

  1. Add all ingredients into small bowl and whisk together.
  2. Taste and adjust seasoning accordingly.
  3. Shuck fresh oysters and drizzle ½ tablespoon over each oyster.

Rose Chips

2 ea roses fresh, remove petals from stem

Method of Preparation:

  1. On a large plate that will fit in the microwave; put down two sheets of paper towels.
  2. Spread the rose petals on the plate and try not to stack on top of each other.
  3. Turn the microwave on high for about 1.5-2 minutes. The rose petal will start to dry out. If the petals are still soft after the 2 minutes put in for another 30 seconds.
  4. When the petals are finished in the microwave, place on a sheet pan and let dry for 28-48 hours on a half sheet pan.
