It is super simple, and perfect for last-minute entertaining. With sweetness and acid from the persimmons, tartness and crunch from the Honeycrisp apple, and a salty finish from the cheese, it’s a perfect combination!

Atlantic Shores’ Spring SaladFresh Corn Salad with Feta Cheese Spring has sprung! This is one of my favorite spring salads as the season starts turning green. I fondly remember my time working on a farm, where I was their cheese maker. When corn was in season, this would be my go-to salad on my lunch break. It is so simple, and jammed packed with flavor. It’s also a diverse salad that you change up with different fresh vegetables as the seasons change. For example, I have used thinly sliced Tuscan Kale, and changed out the dill for fresh Tarragon. Arugula Apple Salad with Seared Scallops and Pomegranate VinaigretteWith the fall season approaching, chefs are left with finding ways to approach menus using the freshest available ingredients, while keeping light and tasty in mind. I recently did a wine tasting at Atlantic Shores using the following recipe as a first course. It combines fresh scallops with a light arugula salad tossed with fennel, green apples and pomegranate vinaigrette.
